Often considered one of the founding fathers of Champagne itself, the Benedictine Monk Dom Pierre Pérignon spent forty-seven years working in the historic Abbey of Hautvillers pursuing his ambition to create the "best wine in the world. Based on a core of Grand Cru villages and the oldest vines of the Premier Cru of Hautvillers, 'The Dom' is a wine of tension, power and long-ageing endurance and has been the vision of talented Chef de Cave, Vincent Chaperon, for over two and a half decades. Dom Pérignon is only available as a vintage champagne and is only produced in exceptional years. Each vintage is a creation, singular and unique, that expresses both the character of the year, and the character of Dom Pérignon. After at least eight years of elaboration in the cellars, the wine embodies the perfect balance of Dom Pérignon, the Plénitude of harmony. Generous and expressive on the nose with initial classic Dom Perignon notes of citrus fruit and precise flinty minerality broadening to a creamy textured richness. Chardonnay seems to be to the fore at this stage with Winemaker Vincent Chaperon describing Chardonnay in 2010 as their 'best ever'. Suave, supple and glossy on the palate with a flamboyant fluid mid-palate nicely balanced by freshness and a fine polished finish.
